Just bought a new crock pot? Any delicious recipes for one or two?

It's me and my roommate, though we both like leftovers, so recipes for more might be just as good. We are not fussy eaters, though she is allergic to onions. Any healthy crock pot recipes would be great!! ThanksJust bought a new crock pot? Any delicious recipes for one or two?
INGREDIENTS


4 pounds rump roast


2 (10.5 ounce) can beefs broth


1 (12 fluid ounce) can or bottle beer


6 French rolls


2 tablespoons butter





DIRECTIONS


Trim excess fat from the rump roast, and place in a slow cooker. Add the beef broth and beer. Cook on Low setting for 7 hours.


Preheat oven to broil Split French rolls, and spread with butter. Broil til toasty. Slice the meat on the diagonal, and place on the rolls. Serve the sauce for dipping.


I add some Provolone cheese to the sandwich. This recipe is super good, super easy and you can make as much or little as you want depending on the roast size.

I am assuming that your crock pot came with instructions and a sample of recipes, right? You see, once you start with a few actual written recipes and get the crock pot method down, you hardly need a recipe anymore. Besides googling crock pot recipes, look at the top of this page where it says search for questions and check that out as crock pot recipes are always requested on this site and I bet there are a bunch there too.
Heavenly Harvest Pork Roast:





1/4 cup pomagranite juice


1/4 cup sugar


1 tbsp salt


1 tbsp granulated garlic


1 tbsp steak seasoning


1 tsp black pepper


1 pork roast (4-5) pounds


2 pears, cored peeled and sliced thick


1/2 ornage peel on, sliced thick





Heat the pomagranite juice and sugar until the sugar is dissolved, pour into the bottom of the crock pot.





Mix the salt, granulated garlic, steak seasoning, and pepper. Rub all over pork, then lay the pork on top of the juice in the pan. Turn once so that it is coverd in the juice.





Cover the pork with the pears and oranges. Cover and cook on high for 6-8 hours or until tender. Serve with juice and fruit slices.





***Left overs from thi can be used in pulled b-b-q pork sandwiches, pulled pork burritos or tacos etc... Simmer the prok with chicken broth, and some liquid form diced green chili peppers, cumin and garlic for burrtios/tacos or even quesadillas.

The left overs from this recipe could be used for qusdaillas, b-b-q chicken sandwiches, tacos, tortilla soup etc....





Crock Pot Chicken Salsa Curry





10 chicken thighs-bone in


1 jar of your fav salsa


1/2 onion chopped


1 tablespoon curry (or about 1/2 if you don't like a strong curry taste)


1/2 cup sour cream





Place the chicken in the crock pot. Mix the onion, curry and salsa. Pour over the chicken and cook on low for about 6-8 hours.





When the chicken is done take it out of the crock pot and put on a serving plate. Add the sour cream and mix well. Spoon the sauce over the chicken.





You could make you rown salsa with canned stewed tomatoes, jalapenos, cilantro, olive oil, garlic, lime juice and a pinch of salt.





or just use plain old stewed tomatoes.
Until my dad was 96 years old, he ate the same thing for dinner every evening. Here's his recipe (he developed it, and I was surprised at how good it is).





Jake's Crock Pot Dinner





1录 Pound Lean Beef Roast


3 Medium Potatoes


2 Medium Carrots


1 Can Whole Kernel Corn with liquid


陆 Medium Onion


1 Can Cut Green Beans with liquid


1 Small Can Tomato Sauce


1 Can Sweet Peas with liquid





2:00 P.M. Cut beef into four equal pieces. Season with salt and pepper; place in a 3陆 quart crock pot. Add 4 to 5 ounces of water and cook on high for 1 to 1录 hours.


3:00 P.M. Dice carrots and mince onion. Add to pot along with tomato sauce. Let simmer for another hour.


4:00 P.M. Cube potatoes, add to pot with corn. Cook another hour.


5:00 P.M. Add the peas. Cook another hour.


6:00 P.M. Finally, add the beans and cook for an hour.


7:00 P.M. Serve with rice and hearty bread.


He lived to be 97, so it might promote longevity.
I love my Crock pot =]. I make New England Clam Chowder in it. No onions, and it tastes great.





Also Chili is excellent and you do not need to add onions.





Just beans. Beef. And Tomatoe sauce/ Paste %26amp; seasoning to taste. Throw in some spices %26amp; make your own mix up.

    Chocolate Chip Cheese Ball





    1- 8 oz. cream cheese, softened


    1 stick butter, softened


    1/2 cup chopped pecans, finely chopped


    2 Tbsp. light brown sugar


    3/4 cup powdered sugar


    1 tsp. vanilla


    3/4 cup mini semisweet chocolate chips





    Combine all ingredients (except choc. chips) in a bowl, much like you would a cookie dough. Refrigerate for at least half an hour. Take out mixture, form into a ball, then roll it in the choc. chips. Refrigerate again until ready to serve. Serve with graham crackers, vanilla wafers, or shortbread cookies.

    Spanakopita (Spinach Tarts)





    1/2 cup olive oil


    1 bunch chopped scallions, white and green parts


    2 (10-ounce) boxes frozen chopped spinach, defrosted


    2 tablespoons chopped fresh dill


    3 extra-large eggs, lightly beaten


    7 ounces feta cheese, crumbled


    1/4 teaspoon kosher salt


    1/4 teaspoon freshly ground black pepper


    40 sheets (1 box) frozen phyllo dough (such as Pepperidge Farm), defrosted overnight in the refrigerator


    1/2 pound (2 sticks) unsalted butter, melted


    1/2 cup plain dry breadcrumbs





    Preheat oven to 400潞F. Heat the olive oil in a saute pan and add the scallions. Cook for 5 minutes or until soft. Meanwhile, squeeze most of the water out of the spinach and place it in a bowl. Add the scallions, dill, eggs, feta, salt, and pepper and mix together.





    Keep the phyllo dough sheets covered with a damp kitchen towel. Unfold 1 sheet of the phyllo dough. Brush the sheet with melted butter and sprinkle with breadcrumbs. Repeat the process by laying a second sheet of phyllo dough over the first sheet, brush it with melted butter and sprinkle with breadcrumbs until all 10 sheets have been used. Spoon 3/4 cup of the spinach mixture into a sausage shape along one edge of the phyllo dough. Roll it up. Brush the top with butter and score the roll into 1-inch rounds. Place it on an oiled baking sheet. Repeat until all the pastry and filling have been used.





    Place in the oven and bake for 12 minutes or until the edges are lightly browned. Serve warm.

    Boursin Dijon Lemon Artichoke Dip





    1 tub of Boursin cheese


    2 tablespoons capers (more or less to your taste)


    1 tablespoon dijon mustard


    juice of one fresh lemon


    drizzle of good olive oil





    In a small bowl, combine the lemon juice and capers. Mash the capers up and add the boursin and dijon mustard. Drizzle in just a bit of olive oil to give it a smooth dip consistency. It can be as thick or thin as you like. You can also leave the capers whole if you like the little bursts of flavor.

    Edna鈥檚 Armadillo Eggs





    Mix together:


    陆 lb. Owens Hot Sausage


    陆 lb. shredded Monterey Jack cheese


    1陆 cups Bisquick


    And enough water to be able to pat these into little pancakes.





    Seed a whole pickled jalapeno pepper and place a small piece of monterey jack cheese inside the pepper. Place stuffed jalapeno on top of a little pancake and close pancake to seal, forming into the shape of an egg.





    Brush eggs with an egg wash (1 egg beat with 1 Tbsp. water). Bake in a slow oven (about 325潞F) for 25-30 minutes. Serve warm or at room temperature.Any tried-and-true, different %26amp; delicious party appetizer recipes?
    Dumplings are a fun finger food that everyone loves. These dumplings have pork, but you can always play around an make all vegetable dumplings or seafood. Enjoy!





    Chinese Dumplings





    **triple-tested at the Good Housekeeping Research Institute**





    INGREDIENTS


    2 cup(s) (packed) sliced Chinese cabbage (Napa)


    1/2 pound(s) ground pork


    2 tablespoon(s) soy sauce


    1 tablespoon(s) dry sherry


    2 teaspoon(s) cornstarch


    1 1/2 teaspoon(s) ginger root, minced, peeled


    1 green onion, minced


    36 (3/4 12-ounce package) wonton-skin wrappers, 3 1/2'; by 3 1/4';


    1 large egg white, beaten


    Soy Dipping Sauce (recipe below)


    Green onions for garnish





    DIRECTIONS


    1. Prepare filling: In 2-quart saucepan over high heat, in 1 inch boiling water, heat cabbage to boiling. Cook cabbage 1 minute; drain. Immediately run cold water over cabbage to cool. With hands, squeeze as much water out of cabbage as possible.


    2. Finely chop cabbage. Squeeze liquid from chopped cabbage; place in medium bowl. Stir in pork, soy sauce, sherry, cornstarch, ginger, and green onion.


    3. Arrange half of wonton-skin wrappers on large sheet of waxed paper. With pastry brush, brush each wrapper lightly with egg white. Spoon 1 rounded teaspoon filling onto center of each wonton wrapper. Bring opposite corners of wonton wrapper up over filling; pinch and pleat edges together to seal in filling. Repeat with remaining wonton wrappers, egg white, and filling


    4. In deep 12-inch skillet over high heat, heat 1/2 inch water to boiling. Place all dumplings, pleated edges up, in one layer in skillet. Stir gently with spoon or heat-proof spatula to prevent dumplings from sticking to bottom of skillet. Heat dumplings to boiling. Reduce heat to low; cover and simmer 5 minutes or until dumplings are cooked through.


    5. Meanwhile, prepare Soy Dipping Sauce: In small serving bowl, mix 1/4 cup soy sauce, 1/4 cup seasoned rice vinegar or white wine vinegar, 2 tablespoons angel-hair-thin strips peeled ginger root. Makes about 1/2 cup sauce.


    6. With slotted spoon, remove dumplings to platter; garnish with green onions. Serve with dipping sauce.

    The FoodNetwork website has a great recipe for a hot corn dip. It sounds a little wierd but everyone goes nuts for it when I make it. (I use frozen corn and it works just fine.)





    2 tablespoons unsalted butter


    3 1/2 cups corn kernels (from 4 ears fresh white or yellow corn)


    1/2 teaspoon salt


    1/8 teaspoon freshly ground black pepper


    1 cup finely chopped yellow onions


    1/2 cup finely chopped red bell peppers


    1/4 cup chopped green onions (green and white parts)


    1 jalapeno, seeded and minced


    2 teaspoons minced garlic


    1/2 to 1 cup mayonnaise


    4 ounces monterey jack or cheddar, shredded


    4 ounces sharp cheddar, shredded


    1/4 teaspoon cayenne


    Tortilla chips, for dipping





    Preheat the oven to 350 degrees F.


    Melt 1 tablespoon of the butter in a large heavy skillet over medium-high heat. Add the corn, salt, and pepper. Cook, stirring occasionally, until the kernels turn deep golden brown, about 5 minutes. Transfer to a bowl. Melt the remaining tablespoon of butter in the skillet. Add the onions and bell peppers and cook, stirring often, until the onions are wilted, about 2 minutes. Add the green onions, jalapeno, and garlic and cook, stirring, for 2 minutes, or until the vegetables are softened. Transfer to the bowl with the corn. Add the mayonnaise, 1/2 of the monterey jack and half of the cheddar, and the cayenne and mix well. Pour into an 8-inch square baking dish and sprinkle the remaining cheese on top. Bake until bubbly and golden brown, 10 to 12 minutes. Serve hot with the chips.
    Smoked Sausage Crock Pot Heinz 57


    1 bottle Heinz 57 steak sauce (small)


    1 can jelled cranberry sauce


    2 tablespoons brown sugar


    3 lbs sliced smoked sausage


    Brown sliced smoked sausage. Melt steak sauce, cranberry sauce and brown sugar in a saucepan over medium heat until smooth. Place meatballs in crock-pot, pour mixture over and place the crock-pot on low. Excellent!





    ********Marmalade Meat Balls





    Ingredients


    2 pounds fully cooked frozen meatballs


    1 bottle (16-ounce) Catalina salad dressing


    1 cup orange marmalade


    3 tablespoons Worcestershire sauce


    1/2 teaspoon red pepper flakes=1/4 cup





    Instructions


    Place frozen meatballs in the insert of a slow cooker. In a bowl, stir


    to combine the remaining ingredients. Pour over meatballs and stir to coat. Cook on high setting for


    2 to 3 hours.
    WHISKEY SHRIMP. I HAVE MADE THESE FOR APPETIZERS MANY TIMES AND THEY ARE A BIG HIT. NEVER ANY LEFT.





    1 pound peeled and deviened raw shrimp medium size is fine


    1cup catsup


    1cup whiskey


    1 tablespoon lemon zest


    1 large sprig thyme





    mix catsup, whiskey, lemon zest, %26amp; thyme in large frying pan or saute pan. DO NOT MIX WITH PAN ON BURNER AS ALCOHOL IS FLAMABLE!


    Place on medium heat on stove top and let simmer until it starts to thicken a little.Add shrimp and cook until shrimp turns pink or is cooked.


    Serve warm.


    alcohol does not cook out in this recipe.
    Those little cocktail smokies are admittedly not very different but what you can do to make them different is take along a selection of dips for them. I have three that I always use with them.





    The first is simply bottled barbecue sauce--roasted garlic is great.





    The second is a sauce we always made at Boy Scout get-togethers: 1/2 cup grape jelly mixed with 1 cup ketchup and melted over low heat until bubbly. Odd, yes, but wonderful!





    And third my special honey-mustard:





    1/2 cup Miracle Whip


    1/4 cup honey


    4 tablespoons Dijon mustard


    4 tablespoons regular mustard


    2 tablespoons horseradish sauce


    1 teaspoon garlic powder


    1/4 teaspoon white pepper or to taste





    Mix all ingredients well.





    Arrange your platter with the smokies in the center surrounded by little dishes of the sauces and garnish with a few sprigs of fresh parsley. Makes a very pretty dish!
    Here are 2 very easy but tasty tips:


    Pour picante over cream cheese. Serve at room temperature with white corn chips (like tostitos).





    Pour pepper jelly over cream cheese and serve with crackers.

    All-Bran Extra Fiber Muffins





    Ingredients


    1/2 C. sugar


    1 Tbs. baking powder


    2 C. Kellogg's all-bran cereal


    1 1/4 C. skim milk


    1/4 C. applesauce


    1/4 C. (2 oz.) Eggbeaters 99% real egg product


    1 1/4 C. flour





    Directions


    Stir together flour, sugar %26amp; baking powder. In a large mixing bowl, combine cereal and milk. Let stand 5 minutes or until cereal softens. Add Eggbeaters product and applesauce. Beat well. Add flour mixture stirring only until combined. Pour into 12 muffin cups. Bake at 400 degrees for 20 minutes until lightly brown.     Fresh fruit, yogurt, and ice cubes would make a great drink. If you have to, add some fiber sure, or whatever it is called on the commercials. That tends to help. Deserts can be regularly made, just add that fiber supplement to it. Or if you want to do a type of regular meal, add some bread to the recipes, or just make sure you have your fiber nutriated type of food.

    To be yummi its almost never quick and easy... But ifyou want quick and easy this is yummy to me. (I make it when I'm starving or in a hurry).





    1 onion chunked


    1 bell pepper chunked


    a couple of slices of tofu


    enough vegetable oil to cover the bottom of a skillet





    Heat the oil, with the onions and pepper, add the tofu slices.


    Move the stuff a bit so it does'nt stick. Turn the tofu slices, so they cook on both sides. Once the togu is a golden colour on both sides, remove from heat. Add a couple of table spoons of spare ribs sauce that you buy in a jar, directly on the tofu.


    serve with rice!








    Tofu salad sandwish





    Crush a bit of tofu


    add some chopped cellery


    some chopped green onions


    mayonnaise


    a pinch of parsley


    salt and pepper


    2 slices of whole wheat bread


    some alfalfa sprouts


    Voil脿!





    Cubes of tofu is also good when added to a pakage of oriental soup. I also add pieces of brocoly and red bell peppers. Delicious and very easy.














    Tofu Pumpkin Pie with Pecan Surprises and Tofu Creme


    Pastry Dough:


    1 1/2 cups of whole wheat pastry flour


    1/4 teaspoon of sea salt


    1/4 cup of corn oil, less may be needed


    1/4 cup of cold rice milk or water





    Preheat the oven to 375 degrees. Lightly oil a 9-inch pie plate.


    Mix the flour, salt and oil thoroughly, using a fork to incorporate the ingredients. Slowly add the rice milk and stir to form a stiff dough. Gather it into a ball and knead for 2 minutes. Roll out thinly between sheets of waxed paper to form a 10-inch circle. Lay it over the prepared pie plate, pressing it down to eliminate any air pockets. Crimp edges. Prick the pastry with a fork and bake for 10 minutes. Allow the crust to completely cool before filling.





    Pecan Surprise:


    1/3 cup of barley malt or maple syrup


    2 tablespoons of corn oil


    1/2 cup pecans, chopped


    Whole toasted pecans for garnish





    Combine the sweetener and corn oil in a saucepan and cook until foamy. Quickly stir in the pecans. Spread evenly over the bottom of the pie crust and set aside at room temperature.





    Pumpkin Filling:


    1 pound of firm tofu


    1 (16-ounce) can of pumpkin puree (do not use fresh pumpkin because it is too watery)


    1 cup of maple syrup


    1 tablespoon of barley malt or molasses


    1/2 teaspoon of sea salt


    1 teaspoon of pure vanilla extract


    1 teaspoon of ground cinnamon


    1/4 teaspoon ground nutmeg


    1/4 teaspoon ground allspice





    Preheat the oven to 350 degrees. Combine all of the ingredients in a food processor. Process for about 3 minutes. Pour the filling into the prepared crust and bake for 50 minutes. Garnish the edge of the pie with whole toasted pecans. Let the pie cool and serve. This pie is also delicious served chilled, allowing the pie to rest about 10 minutes after you pull it from the refrigerator before eating insures optimum flavor.


    TOFU WHIPPED CREME:


    1/2 pound of firm tofu 1/2 pound of silken tofu 1/4 cup of maple syrup 1 tablespoon of pure vanilla extract 1 to 2 tablespoons of water A few grains of sea salt


    In a food processor or blender, combine all ingredients until smooth. Add water if necessary to achieve a whipped cream consistency. Refrigerate until needed.


    Yield: about 2 cupsEasy delicious tofu recipes?

    Mixed Fruit Smoothie





    Ingredients


    2 bananas, chilled


    2/3 cup strawberries or mango slices


    1 12-ounce can grape juice or mango, apricot, strawberry, or other fruit nectar, chilled


    1 8-ounce carton fat-free yogurt


    1 tablespoon honey (optional)


    2 tablespoons ground pistachio nuts (optional)





    Directions


    In a blender combine bananas, strawberries or mango slices, grape juice or fruit nectar, yogurt, and, if desired, honey. Cover and blend until smooth. Pour into six tall, chilled glasses. If desired, sprinkle with ground pistachio nuts. Makes 6 smoothies.





    Note: For two-tone smoothies, make mango smoothies and strawberry smoothies. Transfer to separate pitchers or glass measuring cups. Taking a pitcher or cup in each hand, slowly pour both smoothies at the same time into opposite sides of the glass.

    Tropical Smoothie





    Ingredients


    1 small ripe banana, peeled and cut in half


    1 container (6 or 8 oz.) low-fat maple-vanilla or vanilla yogurt


    1 small ripe mango, chopped


    1/2 cup calcium-fortified orange juice


    1 teaspoon sugar


    1/2 cup ice cubes





    Directions


    Puree banana, yogurt, mango, orange juice and sugar in blender. With machine on, add ice cubes one at a time through feed tube, until mixture is smooth and thick. Makes 2 servings.I just got a new smoothie blender, anyone have any delicious smoothie recipes?
    Tropical Bonanza smoothie





    1 banana peeled and sliced


    1/2 a cup pineapple chunks


    1 cup of frozen mangoes (I use Trader Joe's)


    A bunch of grapes (don't count, but 24 is good)


    1 medium sized passionfruit (if you can't find them at your regular grocery stores, try a specialty food shop, or just don't use them... They just make it tangy.)


    1 cup fresh white peaches, cut into chunks


    Several ice cubes, whatever fits your taste


    3 cups good tropical fruit cocktail, Welche's is good





    Put all ingredients in blender and puree or whatever option on your blender works best for you. You may want to choose something that leaves some fruit bits. Enjoy!





    Serves 4.
    ICE, CHOPED WATER MELON, AND DEPENDING ON THE SERVINGS USE SUGAR AS DESIRED TO MAKE IT SWEET, THEN BLEND.

    my favorite is 1% milk a little ice a bananna and a tablespoon of Nutella, I usually add some chocolate flavored protein powder too, it helps to thicken it without using ice cream or something. Nutella is that hazelnut flavored stuff that is like peanut butter for europeans

    Remove seeds from some pieces of watermelon and throw them in the blender. (approx 2 cups, i would guess)





    Add some frozen strawberries...FROZEN (this allows you to avoid the usage of ice...probably about 1-1.5 cups)





    Toss in some sugar (??? cups--to taste) and a dash of lemon juice. BLEND!!!





    Pretty much everything is just to taste so, yeah. Have fun!!!

    1 cup frozen strawberries


    1 cup orange juice

    My son bought one of those drinks while at Penn Station last year and he loved it. So, I bought that smoothie blenders and he was thrilled. He loves it. He can't cook a thing and just creates his own concoctions of fruits with frozen bananas, milk, yorgurt and adds different syrups and really enjoys it.


    His thinking is... if he likes the ingredients, he'll like the results of whatever he mixes. It works for him.

    Getting a bit bored of stilton or peppercorn sauce on my steak, anyone got any recipes for some different delicious sauces? Cheers.Any delicious steak sauce recipes?
    How about a mustard sauce.... a little different.





    Make a basic white sauce:





    1/2oz butter


    1/2oz plain flour


    1/2 pint milk





    Melt butter in a saucepan, then stir in flour and mix till combined, gently add the milk in small quantities, stirring all the time, when all milk added, continue to stir till comes to the boil, simmer for 3-4 minutes till thick, stirring occassionally.





    Add 2tsp dry mustard mixed with 2tsp vinegar, stir in well and serve.

    Or mushroom sauce.





    Make basic white sauce as above, but instead of adding mustard, add 3oz of mushrooms, previously chopped and fried off in butter

    Bernaise Sauce - slightly more difficult





    2tbsp tarragon wine vinegar


    3 tbsp wine vingar


    1 tbsp finely chopped onion


    2 egg yolks


    2 tsp cold water


    4 oz butter, softened


    salt %26amp; pepper


    1 tbsp chopped parsley





    Put both vinegar and onion into a pan, boil gently until liquid is reduced by about a third.





    Leave until cold and strain, keeping liquid.





    Put egg yolks, reduced vinegar liquid and water into a double saucepan (or basin standing on pan of simmering water). Whisk until thick and fluffy.





    Gradually add butter, a tiny piece at a time. Continue whisking until each piece has been absorbed and the sauce has thickened.





    Season to taste and stir in parsley.

    Fillet steak with red wine sauce





    Serves 1











    Preparation time less than 30 mins

    Ingredients


    150g/5陆oz beef fillet steak


    2 asparagus spears


    1 tsp olive oil


    salt and freshly ground black pepper


    For the pepper sauce


    55ml/2fl oz red wine


    1 tbsp Worcestershire sauce


    1 tsp Dijon mustard


    55ml/2fl oz double cream


    陆tsp freshly ground black pepper











    Method


    1. Cut a pocket into the fillet steak and stuff with the asparagus spears. Rub the steak with olive oil, salt and freshly ground black pepper, to taste.


    2. Heat a small frying-pan over a high heat. Add the steak and fry for two minutes on each side (or longer, according to taste) and set aside on a warm plate.


    3. Meanwhile, to make the sauce, place the wine, Worcestershire sauce, mustard, cream and pepper in a small saucepan. Bring to the boil and reduce for five minutes, or until thick.


    4. Serve the steak with the sauce poured over.
    you could try pepper corn sauce which u make by dicing an onion up frying of then add mushroom if u like fry these of then cracked black pepper corns then add double cream i hope u like this
    1 c. ketchup


    3 tbsp. brown sugar


    1/2 cup of onion, finely chopped


    6 large cloves garlic, finely chopped


    1/4 cup water


    1/4 cup Worcestershire sauce


    1/4 cup freshly squeezed lemon juice


    1/4 cup white wine or tarragon vinegar


    2 tbsp. soy sauce


    1 tsp. dry mustard


    1 large whole shallot, chopped


    1/2 teaspoon dried onion powder


    1 tbsp liquid pectin


    1/4 teaspoon ground cloves


    1/4 teaspoon cinnamon


    4 whole anchovies (canned)


    4 large whole large mushrooms, fresh





    Place all ingredients in blender container and process until smooth. Simmer in saucepan 20 minutes and cool. Store in refrigerator.

    Towie Barclay Sauce





    served at the Towie Tavern in the North East of Scotland:





    1 carton of double cream


    2 - 3 slices of smoked back bacon


    1 - 2 small tomatoes


    1 heaped tablespoon of wholegrain mustard


    port or red wine to taste





    sit the tomatoes in hot water to deskin them, then quarter them and dispose of the hard cores, cut the deskinned quarters into cubes





    cut the fat off the bacon and cut bacon into 1cm thin strips





    put the cream, mustard bacon and tomatoes onto a gentle heat and simmer until bacon is cooked, and the port or red wine to taste and enjoy with your steak! x
    personally, I don't think anything will top a touch of Worcestershire sauce, but bleu cheese butter is pretty good.

    Cooking instructions:


    Precut your chicken into stir-fry sized strips and freeze in a zip-loc bag. Do the same with your veggies. (snow peas, water chestnuts, broccoli, carrots, onions, mushrooms, asparagus, baby corn, and whatever else you like in stir-fry)


    Start the rice cooking. Cook the chicken and set aside, then cook the veggies. Thicken the veggie sauce with the cornstarch. Flavor with soy sauce. Put the cooked chicken back in the pan with the veggies to re-heat.


    Serve over the rice, topped with crunchy noodles.


    ** often times I just buy the big bag on stir fry veggies and always use minute rice.

    Can add salt or pepper to batter mix, as pancake batter is sweet, particularly with Vidalia onions. Can also use Seasoned Salt, Essence of Emeril, Lemon or Cayenne Pepper to Red or White Bermuda onions for spicier rings.

    Mix dough. Shape into small ball then roll into circles. Set aside.


    Prepare Filling: Heat pan and oil it. Stir in 1/2 pound pork, the dried shrimp, water chestnuts, stir quickly, until pork is grey. Add remaining ingredients. Stir well.

    you can make steamed pork dumplings





    you just need the following:


    *1/4 k ground pork


    *2 medium sized carrots, finely chopped


    *2 medium sized onions, finely chopped


    *a head of garlic, finely chopped


    *1/3 tsp salt


    *1/3 tsp pepper


    *40-60 wanton wrappers


    *soy sauce, some lemon juice, and chili paste mixed together to make a dipping sauce





    Mix the first six ingredients in a bowl to make the filling. Mix well, then spoon about 1/2 tablespoon of mixture into each wrapper. Fold and seal the edges using water (so this makes a rather twisted top). Once done, just set all of the dumplings aside for a while and prepare the steamer.





    Boil water and then brush the steamer with some oil. When the water has boiled, arrange the dumplings in the steamer and let stand for 15-20 minutes, or longer, as you wish. Once done, arrange them on a plate, serve with the dipping sauce, and enjoy :)

    PEACH PIE





    2 16 oz. cans sliced peaches in syrup


    1/2 cup sugar


    2 tablespoons butter


    2 tablespoons flour


    1/4 teaspoon ground nutmeg


    1 tablespoon fresh lemon juice


    2 pie crusts (top and bottom)


    cinnamon sugar





    Preheat oven to 400掳F degrees. Drain peaches, reserving 1/3 cup syrup.





    In a saucepan, mix together sugar, flour, nutmeg and a pinch of salt. Add reserved syrup and cook, stirring constantly, over medium heat until mixture becomes thick and bubbly.





    Add butter, lemon juice and peaches. Remove from heat and allow to cool.





    Meanwhile, line a 9 inch pie dish with pie crust; fill.





    Using a wavy-edged pastry wheel, cut upper pastry crust into lattice strips (optional). Put lattice strips on top of filled pie and dust with cinnamon sugar.





    Bake at 400掳F degrees 40 to 45 minutes until golden brown.





    Serve with vanilla ice cream topped with peach syrup or garnished simply with a sprig of fresh mint.

    1 (9 inch) pie shell, baked


    1 (15 ounce) can sliced peaches, juice reserved


    1 (3.5 ounce) package instant vanilla pudding mix


    1 cup milk


    1 cup sour cream


    1/4 teaspoon almond extract


    1 tablespoon cornstarch


    1 teaspoon lemon juice











    DIRECTIONS


    Drain peaches, reserving 2/3 cup of syrup. Stir together pudding mix, milk, sour cream, and almond extract for 2 minutes, until very smooth. Pour filling into pie shell. Chill for 10 minutes.


    Arrange peach slices in a nice pattern over custard in pie shell.


    In a small saucepan, mix together reserved peach syrup and corn starch. Bring to a boil, and cook for 2 minutes. Remove from heat, and stir in lemon juice. Pour glaze over peaches. Chill until set. Serve.











    Sour Cream Peach Pie---Yummy!!





    INGREDIENTS


    3/4 cup sour cream


    1/2 cup white sugar


    1/3 cup all-purpose flour


    1/4 teaspoon almond extract


    1 tablespoon all-purpose flour


    1 (9 inch) unbaked pie crust


    4 cups sliced fresh or frozen peaches


    1/4 cup brown sugar











    DIRECTIONS


    Preheat the oven to 425 degrees F (220 degrees C).


    In a medium bowl, stir together the sour cream, white sugar, 1/3 cup flour and almond extract until smooth. Sprinkle 1 tablespoon of flour over the pie crust to prevent it from getting soggy. Alternate layers of peaches and the sour cream mixture, beginning with a layer of peaches and ending with a layer of sour cream.


    Bake for 20 minutes in the preheated oven. Reduce the heat to 350 degrees F (175 degrees C). Continue baking for an additional 35 minutes. Remove the pie from the oven and sprinkle brown sugar over the top. Set the oven to Broil, and broil for 2 to 3 minutes, until caramelized.











    Peach A Berry Pie





    INGREDIENTS


    4 cups fresh peaches - peeled, pitted and sliced


    1 cup fresh raspberries


    3/4 cup white sugar


    3 tablespoons all-purpose flour


    1 teaspoon ground cinnamon


    2 (9 inch) pie crusts


    2 tablespoons butter, softened and cut into pieces


    1 tablespoon coarse granulated sugar








    DIRECTIONS


    Preheat oven to 400 degrees F (200 degrees C).


    Place peaches and berries in a colander for about 15 minutes to drain any excess fluid , then transfer to a large bowl. Gently toss with sugar, flour, and cinnamon. Transfer to a pie crust. Dot with butter, and top with remaining crust. Cut vents in top crust, and sprinkle with coarse sugar.


    Bake 45 minutes in the preheated oven, until crust is golden brown.











    Peach Custard Pie





    INGREDIENTS


    1 (9 inch) pie shell


    4 eggs


    1/2 cup white sugar


    2 cups milk


    1 teaspoon vanilla extract


    4 fresh peaches - pitted, skinned, and sliced








    DIRECTIONS


    Preheat oven to 425 degrees F (220 degrees C).


    In a large mixing bowl, beat eggs and sugar together. Stir in milk and vanilla.


    Arrange peach slices in bottom of pastry-lined pie pan. Pour custard mixture over peaches.


    Bake in preheated oven for 10 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake an additional 45 minutes, until custard is set and toothpick inserted in center comes out clean.











    Peach, Apricot Fried Pies--- Yummy!!





    INGREDIENTS


    4 cups all-purpose flour


    2 teaspoons salt


    1 cup shortening


    1 cup milk


    8 ounces dried apricots


    1 (6 ounce) package dried peaches


    3/4 cup white sugar


    2 cups vegetable oil for frying











    DIRECTIONS


    To Make Crust: In a large bowl, mix together flour and salt. Cut in shortening until mixture is crumbly. Mix in milk and stir until dough forms a ball. Roll out dough and cut into 18 6-inch circles. Set aside.


    To Make Filling: In a large saucepan, combine apricots, peaches, and sugar. Add enough water to cover fruit. Cover pan and cook over low heat until fruit is falling apart. Remove lid and continue to cook until water is evaporated.


    Place oil or shortening in small high-sided skillet. Place over medium heat. Spoon equal amounts of filling into each pastry circle and fold in half. Seal pastry with a fork dipped in cold water.


    Fry a few pies at a time in hot oil, browning on both sides. Drain pies on paper towels.











    Golden Coconut Peach Pie





    INGREDIENTS


    4 cups sliced fresh peaches


    1/2 cup sugar


    3 tablespoons all-purpose flour


    1/4 teaspoon ground nutmeg


    1/8 teaspoon salt


    1/4 cup orange juice


    1 (9 inch) unbaked pie shell


    2 tablespoons butter


    2 cups flaked coconut


    1 (5 ounce) can evaporated milk


    1 egg, beaten


    1/4 cup sugar


    1/4 teaspoon almond extract











    DIRECTIONS


    In a medium bowl, combine peaches, sugar, flour, nutmeg, salt and juice. Pour into pie shell; dot with butter. Bake at 450 degrees F for 15 minutes. Meanwhile, combine remaining ingredients. Pour over hot filling. Reduce heat to 350 degrees F and bake until coconut is toasted, about 40 minutes. Serve warm or chilled. Store in the refrigerator.

    CANNED PEACH PIE


    2 c. or 1 (#2 1/2) can peaches


    1 c. sugar


    2 tbsp. cornstarch


    1/8 tsp. nutmeg


    1/8 stick butter


    Drain juice from peaches. Mix sugar, cornstarch, and nutmeg and add to juice. Add butter and cook over low heat until mixture thickens. Line pie tin with crust. add peaches and thickened juice. Top with second crust. Bake at 450 degrees for 20 minutes or until brown.

    2 prepared pie crusts


    2 lbs fresh or frozen peaches


    3/4 cp sugar


    1/4 tsp salt


    2tbs lemon juice


    4 tbs flour


    4 eggs





    1. Place one crust in deep dish pie plate.


    2. Prick bottom and sides with fork


    3. Peel and slice peaches

I always place the pie on a cookie sheet in case some juices cook over. Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.

    ';Here's a fairly quick soup that includes chicken and wild rice. It's a big hit during hunting season or on a cold, wintry day. A meal in itself!';


    Original recipe yield: 4 to 6 servings.

    INGREDIENTS:


    1/2 cup uncooked wild rice


    3 tablespoons butter


    1 onion, chopped


    1 cup chopped celery


    3 tablespoons all-purpose flour

    1 (10.75 ounce) can chicken broth


    2 cups milk


    2 cups diced chicken

    Prepare rice according to package directions.

    Add the rice and the chicken and allow to heat through, about 10 minutes.

    saute up your onions celery and carrots in butter, add flour and cook for several mins. Leave the carrots and celery a little bit bigger. Add your chicken stock or broth...cook until the veggies are soft, add in chicken(can use whatever is leftover, boneless) add some hot sauce and crumbled up blue cheese(not dressing) whatever is your favorite kind. Everything thats yummy about wings without the mess.
    Soup, for me, is usually left-overs boiled in water or stock. the best I've made (sorry no amounts):


    Roast beef from the night before (with gravy), dill coated fried potatos, some sauted onions and oven burnt tomatos (so sue me, these weren't left overs), orzo, and salt, pepper, garlic powder, and paprika. Also had some cornstarch water to thicken, because I like that.


    I pretty much boiled the gravy, orzo and tomatoes in some beef stock, until the orzo is a little soft. Threw in salt/pepper and garlic powder to taste, get a hard boil, then tossed in everything that had been precooked and lower temp. simmer for a while add paprika, waited until I thought it was done, and then through in the cornstarch... It was pretty good





    It's sort of stew, but what ever.
    Roasted Vegetable Soup with Thai Pesto


    2 baby eggplants, cut into chunks


    2 red bell pepper, deseeded, cut in chunks


    300g butternut squash (pumpkin), peeled, cut into chunks


    1 large sweet potato, peeled, cut into chunks


    1 spanish onion, peeled and quartered


    2 zucchinis, cut into chunks


    2 carrots, peeled, cut into chunks


    6 cloves garlic, unpeeled


    2 tablespoons olive oil


    2 x 10g vegetable stock cubes


    3 陆 cups water


    Pesto


    1 bunch coriander leaves and stems, roughly chopped


    1 bunch mint, leaves picked


    1 lemon, juice only


    2 cloves garlic


    2 tablespoons finely grated parmesan cheese


    1 tablespoon olive oil


    Places vegetables and garlic in two roasting dishes. Toss in olive oil. Bake in a moderate oven (356掳F) for 45 minutes or until tender, stirring occasionally.


    Remove skin from garlic. Place all vegetables, garlic, stock cubes and 1 cup of water in a food processor. Process.


    Return to saucepan, add remaining water, bring to the boil, reduce heat and simmer for 10 minutes.


    To make pesto, place coriander, mint, lemon juice, garlic and parmesan cheese in a blender. Blend to combine. Add oil with the motor running. Blend well. Serve soup topped with a spoonful of pesto and enjoy with a crusty wholegrain roll or Garlic bread Yummm.





    Hearty Vegetable Noodle Soup


    1 tablespoon olive oil


    1 onion, chopped


    3 cloves garlic, crushed


    650g butternut squash, peeled and diced


    1 red bell pepper, diced


    3 cups salt reduced vegetable stock


    3 cups water


    1 cup brown lentils, rinsed


    1 x 420g can four bean mix, drained and rinsed


    1 x 270g can corn kernals, drained


    60g thin spaghetti, broken into pieces


    1 cup baby spinach


    Heat oil in a large saucepan. Add onion, garlic, butternut squash and bell pepper and cook over medium-high heat for 1-2 minutes.


    Pour in stock and water and add remaining ingredients. Bring to the boil, then reduce heat and simmer covered for 20 minutes.


    Stir through spinach and serve.

    Vegetable Stock





    Makes 20 Cups


    This is an excellent vegetable stock - freeze what you don't use for next time.


    Ingredients:


    1 tbsp extra-virgin olive oil


    2 leeks, white and light green parts only, well washed and chopped


    4 medium onions, chopped


    6 large carrots, peeled and chopped


    3 stalks celery, chopped


    1 small bunch parsley stems


    2 teaspoons dried whole marjoram


    1/2 teaspoon dried whole thyme


    3 Turkish bay leaves or 1/2 Caolifornia bay leaf


    1 1/2 gallons water


    Instructions:


    Heat the olive oil over medium heat in a large pot. Add the vegetables and stir-fry to brown lightly. Add the marjoram, thyme, bay leaves, and cold water. Bring the pot to a boil, reduce the heat, cover, and simmer for one hour.


    Strain the stock through a fine sieve or a cheesecloth-lined colander. Press or squeeze the vegetables to extract their liquid. Discard the vegetables.

    2 tablespoons Chipotle Sauce or to taste

    She-crab Bisque





    1 c. butter


    1/2 c. flour


    2/3 tsp. salt


    1/4 tsp. Old Bay Seafood seasoning


    1 qt. half and half


    2/3 c. sherry


    1 lb. crabmeat





    In double boiler over medium high heat melt butter and flour. Add salt, Old Bay and half and half. Stir until smooth consistency. Bring to a medium thickness, stirring constantly. Add sherry. Cook additional 3-5 minutes. Stir in crabmeat.











    FRENCH ONION SOUP





    3 med. onions, sliced


    2 tbsp. butter


    4 c. beef consomme (below)


    2-4 slices French bread, toasted


    Monterey Jack cheese, sliced





    Cover and cook onions in butter over low heat, stirring occasionally, 30 minutes. Add consomme; heat to boiling. Reduce heat; cover and simmer 30 minutes.


    Pour soup in oven safe bowls (2-4 depending on size). Place slice of toasted French bred in each bowl; then top with slices of cheese. Place bowls on cookie sheet and place in 400 degree oven for 10 minutes or until cheese is browned and bubbly.








    BEEF CONSOMME:





    2 cans (10 1/2 oz. each) condensed beef broth


    1 soup can water


    1 sm. onion, sliced


    1 sm. carrot, sliced


    1 sm. stalk celery, sliced


    2 sprigs parsley


    1 sm. bay leaf


    1/8 tsp. dried thyme leaves





    Heat all ingredients to boiling; reduce heat. Cover and simmer 30 minutes; strain.





    Sicilian Bean Soup





    INGREDIENTS: (About 4 Servings)


    1 cup of navy or kidney beans


    1/2 quarts of water


    Approx. 2 quarts stock


    2 cups of ham dices small (1/4'; square)


    1/2 cup of finely chopped white onions


    1/2 cup of chopped celery


    1 teaspoon of salt


    Pepper to taste





    While there are a hundred Sicilian bean recipes, this is just one of them. I usually like to add sliced carrots to it, too.


    Get a stockpot or 4-quart kettle and add in beans and the water and bring it to a boil. Let it continue to boil for 2-3 minutes and remove it from the burner. Let the beans soak for an hour or so, and then drain them. Be sure to save the water and set aside. Add more stock (about 2 quarts) and add in all the other ingredients. Bring to a boil and then reduce the heat to let it simmer for about 1-陆 hours.

    1 pound Spaghetti sauce, meat flavored


    1/4 cup Grape jelly


    1 14 ounces Can Stewed tomatoes, sliced


    4 slices mozzarella cheese


    Directions:


    1. Moisten eggplant and coat lightly in flour. Quickly brown slices in hot oil, dusting each side generously with seasoned salt. When fork tender and golden brown transfer to jelly roll pan. Cover loosely with foil and bake at 375~ about 20 to 25 minutes or until tender. Use 8 slices for this amount of sauce.


    2. SAUCE-Combine sauce, jelly and tomatoes that have been broken up with a fork. Heat on medium until piping hot. Do not boil Be sure jelly is melted. Arrange 2 sl eggplant on each of 4 plates. Cover each with 1 sl of mozzarella. Ladle sauce over all, not to cover completely.     6 Chicken breasts, boneless, skinless


    8 oz Swiss cheese, sliced


    8 oz Boiled ham, sliced


    3 Tbsp Flour


    1 tsp Paprika


    6 Tbsp Butter


    1 cup Dry White Wine


    1 Chicken Bouillon Cube


    1 Tbsp Corn starch


    1 cup Heavy cream (whipping cream)


    1. Flatten chicken in plastic wrap with mallet


    2. Place 1 slice cheese and 1 slice ham on each breast


    3. Roll chicken and secure with toothpicks


    4. Combine flour and paprika in plastic bag


    5. Shake each piece of chicken in bag to coat


    6. Melt butter in hot skillet and brown chicken pieces on all sides


    7. Combine wine and bouillon and pour slowly into skillet


    8. Reduce heat, cover and simmer for 30 mins on low heat


    9. In bowl combine corn starch and cream until smooth


    10. Slowly add to skillet stirring slowly until mixture thickens


    11. Let simmer a few minutes ensuring chicken is coated

    Butternut Squash Soup





    1 large or 2 medium butternut squash


    5 large carrots


    1/4 cup unhydrogenated coconut oil


    1 cup cashews





    Cut the squash in half, scoop out the seeds and reserve (you can lightly toast the seeds and use as a topping as is or ground). Put the squash cut side down on a greased cookie sheet with the carrots and bake at 350 degrees until soft, about an hour.





    Remove from the oven, allow to cool enough to handle and remove the skin from the squash. Place some of the squash, carrots, cashews, and oil into a blender and blend until creamy, adding just enough water to blend to desired consistency. Empty into a large container. Repeat with remaining ingredients. Stir it all together. Real salt and freshly grated nutmeg optional. Enjoy!

    1 pkg cooked and drained ziti noodles


    1 pkg cream cheese


    1 med or lg container cottage cheese


    1 lg jar of your favorite spaghetti sauce


    bag of shredded mozzarella cheese


    Mix all of the ingredients together, except the mozzarella cheese. Place in well greased 9x13 baking dish. Bake at 350 degrees for 45 minutes...add mozzarella cheese to top and bake an additional 5-10 minutes or until cheese is melted and bubbly.

    3 tablespoons butter


    3 tablespoons all-purpose flour

    4 (approx. 2 pounds) tomatoes


    1/2 cup Parmigiano cheese, freshly grated


    1/4 cup fresh basil, chopped


    1/4 cup Italian flavored bread crumbs


    1 tablespoon olive oil








    COOK Ziti as directed; drain and set aside.





    MELT butter in a small saucepan over medium heat.





    ADD flour, salt, pepper and oregano; cook 1 minute or until bubbly. Gradually stir in millk. Cook 2-3 minutes or until thickened, stirring constantly. Remove from heat; set aside.





    PREHEAT oven to 350 degrees.





    PEEL, seed and chop 3 tomatoes. Slice remaining tomato; set aside.





    Combine bread crumbs and olive oil in a small cup and set aside.





    STIR together pasta, white sauce, chopped tomatoes, cheese and basil in a large bowl.

    Ingredients:





    2 Tbs. salt


    1 lb. ziti, penne or other tubular pasta


    8 Tbs. (1 stick) unsalted butter


    1/2 cup all-purpose flour


    4 cups milk


    1/8 tsp. freshly grated nutmeg


    2 cups grated Parmigiano-Reggiano cheese


    1 cup frozen baby peas


    1/4 lb. prosciutto or ham, chopped


    1/2 cup fresh bread crumbs


    Directions:





    Cook the pasta


    Preheat an oven to 425潞F. Butter a 2-quart baking dish.





    Bring a large pot of water to a boil over high heat. Add the salt and pasta to the boiling water and cook, stirring occasionally to prevent sticking, until not quite al dente, about 2 minutes less than the package instructions. Drain and rinse under cold running water. Set aside.





    Make the sauce


    In the same pot over medium heat, melt the butter. Add the flour and cook, stirring constantly, for 30 seconds. Gradually add the milk, whisking constantly to prevent lumps from forming, and cook until the sauce is thick and creamy, 5 to 10 minutes. Stir in the nutmeg, cheese, peas and prosciutto. Return the pasta to the sauce and toss to combine.





    Bake the pasta


    Transfer the pasta and sauce to the prepared dish. Sprinkle with the bread crumbs. Bake until the bread crumbs are golden and the sauce is bubbling, about 20 minutes. Let cool for 10 minutes before serving. Serves 4 to 6.

    Penne with 5 Cheeses





    Kosher salt


    2 C. heavy cream


    1 C. crushed tomatoes in thick tomato puree


    1/2 c freshly grated Pecorino Romano (1 1/2 oz.)


    1/2 c. shredded imported Italian fontina (1 1/2 oz.)


    1/4 c. crumbled Italian Gorgonzola (1 1/2 oz.)


    2 tablespoons ricotta cheese


    1/4 pound fresh mozzarella, sliced


    6 fresh basil leaves, chopped


    1 pound imported penne rigate pasta


    4 tablespoons (1/2 stick) unsalted butter





    Preheat oven to 500 degrees F.


    Bring 5 quarts of salted water to a boil in a stockpot.


    Combine all the ingredients except the penne and butter in a large mixing bowl. Mix well.


    Drop the penne into the boiling water and parboil for 4 minutes. Drain well in a colander and add to the ingredients in the mixing bowl, tossing to combine. Divide the pasta mixture among 6 shallow ceramic gratin dishes (1 1/2 to 2 c. capacity) Dot with the butter and bake until bubbly brown on top, 7 to 10 minutes.

    Cook boneless skinless chicken breasts in a skillet with a little oil about 4 minutes per side on medium heat. Add one chopped onion, cook briefly and add 1 cup of chicken broth. Cook about 3 minutes then add one jar of spaghetti sauce. Turn heat to low, cover and let simmer until chicken is done, approximately 20 minutes. Meanwhile, cook some ziti following directions on the box. Drain the pasta and serve the chicken and sauce over the pasta. Bagged salad and some Italian bread complete the meal.     1 jar of your favorite spaghetti sauce


    1/2 box of ziti pasta, cooked, drained


    1 c. Mozzarella shredded cheese


    1/2 c. parmesaen cheese if desired





    Direction:


    Brown ground beef until done. Drain. Add spaghetti sauce to meat.


    Cook pasta until it's ala dente or mostly cooked. Drain.


    Place pasta in a glass casserole dish with meat sauce and mix well. Sprinkle cheeses on top and bake at 350 for 15-20 minutes. If cheese cook too quickly, cover the casserole with alum foil.

    Pizza salad is a big favorite in my family, and super easy to make! just make some spiral pasta, let it cool for a few hours, and then add sliced pepperoni, peppers, onions, cubed cheddar cheese, and Italian Dressing to taste. You could leave out the pepperoni also, and just have the cheese and vegetables. Delicious!

    Turon pronounced (too ron) is really easy to make and will surely be a hit. All it is is sliced, ripe plantain that is wrapped in spring roll wrapper like an egg roll and deep fried to a golden brown. You can dredge the plantain in sugar before wrapping them to add additional sweetness.

    CHICKEN IN GARLIC WINE SAUCE





    Chicken is first sauteed in olive oil and garlic, then simmered with roasted red peppers in white wine, making a delicious sauce. It is a easily prepared in 30 minutes, making it a good weeknight dish.


    Prep Time: 10 minutes


    Cook Time: 25 minutes


    Ingredients:


    2 lbs boneless skinless chicken breasts


    5-6 Tbsp extra virgin olive oil


    4-5 garlic cloves


    salt to taste


    2 roasted red peppers


    12-20 oz dry white wine


    Preparation:


    Salt chicken breasts on both sides. Pour olive oil into a large heavy-bottomed frying pan and place on medium heat. When hot, place chicken breasts in pan and brown on both sides.





    While chicken is browning, peel and slice garlic. After chicken is browned, saut茅 garlic in pan with chicken on low heat. Cut red peppers in half and place in frying pan.





    Pour 12 oz white wine into pan and cook on medium heat until chicken is cooked throughout. If white wine evaporates, add 4 oz. more and continue to cook.





    When chicken is cooked, slice the chicken and place on platter with the garlic slices and red pepper. Pour wine sauce over top and serve

    Spanish rice bake


    1 pound lean ground beef


    1/2 cup finely chopped onion


    1/4 cup chopped green bell pepper


    1 (14.5 ounce) can canned tomatoes


    1 cup water


    3/4 cup uncooked long grain rice


    1/2 cup chile sauce


    1 teaspoon salt


    1 teaspoon brown sugar


    1/2 teaspoon ground cumin


    1/2 teaspoon Worcestershire sauce


    1 pinch ground black pepper


    1/2 cup shredded Cheddar cheese


    2 tablespoons chopped fresh cilantro








    2. Cooking Directions


    Preheat oven to 375 degrees F (190 degrees C).


    Brown the ground beef in a large skillet over medium-high heat. Drain excess fat and transfer beef to a large pot over medium low heat.. Stir in the onion, green bell pepper, tomatoes, water, rice, chile sauce, salt, brown sugar, cumin, Worcestershire sauce and ground black pepper.


    Let this simmer for about 30 minutes, stirring occasionally, then transport this to a 2-quart casserole dish. Press down firmly and sprinkle with the shredded Cheddar cheese.


    Bake at 375 degrees F (190 degrees C) for 10 to 15 minutes, or until cheese is melted and bubbly. Garnish with chopped fresh cilantro.
    This savory spinach pie gets richness from cream cheese, Cheddar cheese, and eggs. You may substitute 1 pound of thawed frozen spinach for the fresh, but be sure to squeeze out all the water. Like quiche, the pie may be served warm or at room temperature.





    Ingredients:


    1 teaspoon butter


    1/4 cup diced sweet onion


    1-1/2 pounds fresh spinach, large stems removed and coarsely chopped


    1 (8 ounces) package cream cheese, at room temperature


    3/4 cup milk


    1 teaspoon lemon juice


    1/4 teaspoon salt


    1/4 teaspoon pepper


    1/8 teaspoon nutmeg


    4 eggs


    8 ounces (2 cups) grated Cheddar cheese, divided use


    1 unbaked prepared pie shell


    Preparation:


    Gently saute sweet onions in the butter in a large, deep skillet until translucent. Add chopped spinach and stir constantly until spinach has released its water. Remove from heat.





    Line a colander with cheesecloth and pour in the spinach mixture. Pull up the corners of the cheesecloth, and twist to squeeze out all of the water. Let cool to room temperature.





    Preheat oven to 375 F.





    Beat cream cheese with milk, lemon juice, salt, pepper, and nutmeg. Add eggs, beating until combined. Stir in drained spinach and onions and half (1 cup) of the Cheddar cheese. Pour into prepared pie shell and bake for 25 minutes. Remove spinach pie from oven. Sprinkle remaining Cheddar cheese evenly over the top. Return to the oven and bake an additional 5 minutes, until cheese melts.





    Let cool for 15 minutes before cutting. This savory pie is good warm or at room temperature.

    INCREDIBLE PAELLA RECIPE (This is amazing!!)





    Ingredients:





    1 frying chicken, cut in 12 pieces


    Salt and black pepper, to taste


    1 teaspoon dried oregano


    1/4 cup olive oil


    2 Spanish chorizo sausages


    2 garlic cloves, crushed


    1/2 Spanish onion, diced


    2 ripe tomatoes, peeled, seeded and finely chopped


    Pinch sweet paprika


    2 cups Spanish rice, short to medium grain, like Valencia


    2 teaspoons saffron threads


    6 cups warm stock or water


    2 lobster tails, split


    1 pound calamari (squid), cleaned and cut in rings


    1 pound jumbo shrimp


    1 dozen mussels, cleaned


    1/2 cup sweet peas, frozen and thawed


    Lemon wedges


    Pimentos, cut in strips





    Directions:





    Rinse the chicken pieces and pat dry. Season all over with salt, black pepper, and oregano. Heat the oil in a paella pan or wide skillet. Brown the chicken on all sides, when nearly cooked through, add the chorizo links and brown.





    Remove the chicken and sausage from the pan. Cut the sausages into slices and set aside. Drain out excess oil but don't clean the pan. Make a sofrito by sautiing the garlic, onion, and tomatoes, cook until the mixture caramelizes a bit and the flavors meld. Season with salt, black pepper, and paprika.





    Add the rice, stirring to coat the grains. Steep the saffron in 1/4-cup hot water for 5 minutes then stir it into the rice.





    Add the stock/water and simmer for 10 minutes, gently moving the pan around so the rice cooks and absorbs evenly. Do not cover or constantly stir like risotto. Add the shellfish and the reserved chicken and sausage. Simmer, without stirring, until the rice is al dente and the mussels have opened. (Do not eat any mussels that do not.)





    Scatter the peas on top and continue to cook until the liquid is absorbed. The ideal paella has a toasted rice bottom called socarrat. Allow to rest off the heat for 5 minutes before serving. Garnish with lemon wedges and strips of pimento

    Flan de Almendras (Almond Flan),


    Spanish Dessert Recipe





    The national dessert of Spain, flan is simple to make and a nice light alternative to heavy ice creams and cakes.





    Ingredients for this Spanish dessert:





    * 1 tbs. water


    * 1 3/4 cups of sugar


    * 1/2 cup ground almonds





    * 3 cups milk


    * 1 tsp. grated lemon peel


    * 6 eggs


    * 1/4 tsp. salt


    * thinly sliced orange for garnish











    Preparation Instructions:





    1. In a 9 inch baking pan, caramelize the sugar and water at low heat. When the sugar turns golden, remove from heat and coat the pan bottom with the caramel.


    2. In a blender, mix the rest of the ingredients except the orange until smooth.


    3. Pour the mixture into the caramelized baking pan and place in a larger pan containing 1 inch of water.


    4. Bake at 350 degrees for about one hour until top is set and golden.


    5. Remove pan from the water and allow to cool.


    6. Place a serving plate over pan and flip over. Remove the pan.


    7. Chill at least an hour before serving.











    Serve with the orange slices as a garnish.

    Spanish Dessert Recipe


    Churros can be found throughout Spain, often sold by street vendors who cook them fresh at their carts. The whole street fills with the smell of this delicious fried dough.





    Ingredients for this Spanish dessert:





    * 2 cups water


    * 1 tablespoon olive oil


    * 1/4 teaspoon salt


    * 2 cups of flour


    * Oil for deep frying


    * Granulated sugar for dipping











    Preparation Instructions for Churros:





    1. Place water, olive oil, and salt in a sau

    1 lb. ground beef


    6 slices bacon


    1 med. onion, chopped


    1/4 c. chopped bell pepper


    3/4 c. uncooked rice


    1/2 tsp. salt


    1/8 tsp. pepper


    1/4 c. ketchup


    1 (16 oz.) can tomatoes


    1 (8oz.) can tomato sauce


    2 drops hot sauce





    In large skillet brown meat and drain well. Then set aside. In same pan cook bacon, drain and reserve 2 tablespoons drippings in skillet. Saute onion and pepper in pan until tender. Crumble bacon and stir into pan. Add beef and remaining ingredients. Bring to boil, cover and simmer for 30-40 minutes or until rice is tender.





    QUICK METHOD - SPANISH FLAN (CUSTARD)





    1 pkg. instant vanilla pudding





    Prepare pudding according to package instructions. Immediately add:





    1/4 tsp. ground cinnamon


    4 oz. Cool Whip (1/2 of 8 oz. container)





    Beat together on high speed until thoroughly mixed. Place in small dessert dishes and chill until firm in refrigerator.


    To Serve: Drizzle warm honey over top and stick small stick of cinnamon into each dish as a garnish.
