I want to make a new, but simple lunch/supper for my family. Anyone have any great and delicious recipes?

I want some recipes that are easy and simple for supper or lunch. It would also be great if my kids would like them too. I've been trying to find some online, but all the recipes are all over the top and way to complicated. Thanks. -pinkchickI want to make a new, but simple lunch/supper for my family. Beef Tips and Noodles --








INGREDIENTS


1 pound sirloin tips, cubed


1 (10.75 ounce) can condensed cream of mushroom soup


1 (1.25 ounce) package beef with onion soup mix


1 (4.5 ounce) can mushrooms, drained


1 cup water


1 (16 ounce) package wide egg noodles








DIRECTIONS


Preheat oven to 400 degrees F (200 degrees C).





In a 13x9 inch casserole dish, combine the mushroom and beef onion soups, canned mushrooms and water. Mix thoroughly and add beef tips. Turn to coat well.





Bake in a preheated oven for 1 hour.





While beef tips are baking, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Serve beef tips and sauce over noodles.

Easy Meatloaf --








INGREDIENTS


1 1/2 pounds ground beef


1 egg


1 onion, chopped


1 cup milk


1 cup dried bread crumbs


salt and pepper to taste


2 tablespoons brown sugar


2 tablespoons prepared mustard


1/3 cup ketchup








DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C).





In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish.





In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.





Bake at 350 degrees F (175 degrees C) for 1 hour.

Breaded Chicken Fingers --








INGREDIENTS


6 skinless, boneless chicken breast halves - cut into 1/2 inch strips


1 egg, beaten


1 cup buttermilk


1 1/2 teaspoons garlic powder


1 cup all-purpose flour


1 cup seasoned bread crumbs


1 teaspoon salt


1 teaspoon baking powder


1 quart oil for frying








DIRECTIONS


Place chicken strips into a large, resealable plastic bag. In a small bowl, mix the egg, buttermilk and garlic powder. Pour mixture into bag with chicken. Seal, and refrigerate 2 to 4 hours.





In another large, resealable plastic bag, mix together the flour, bread crumbs, salt and baking powder. Remove chicken from refrigerator, and drain, discarding buttermilk mixture. Place chicken in flour mixture bag. Seal, and shake to coat.





Heat oil in a large, heavy skillet to 375 degrees F (190 degrees C).


Carefully place coated chicken in hot oil. Fry until golden brown and juices run clear. Drain on paper towels.

Easy Mexican Casserole --











INGREDIENTS


1 pound lean ground beef


2 cups salsa


1 (16 ounce) can chili beans, drained


3 cups crushed tortilla chips


2 cups sour cream


1 (2 ounce) can sliced black olives, drained


1/2 cup chopped green onion


1/2 cup chopped fresh tomato


2 cups shredded Cheddar cheese








DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C).





In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans, and heat through.





Spray a 9x13 baking dish with cooking spray. Spread crushed tortilla chips in dish, and then spoon beef mixture over chips. Spread sour cream over beef, and sprinkle olives, green onion, and tomato over the sour cream. Top with Cheddar cheese.





Bake in preheated oven for 30 minutes, or until hot and bubbly.I want to make a new, but simple lunch/supper for my family. Anyone have any great and delicious recipes?

Au Gratin Potatoes and Meatloaf Meal





Au Gratin Potatoes


5 large potatoes, peeled and sliced thin


1 medium onion, halved and sliced thin


陆 tsp black pepper


1 26-oz. can cream of mushroom soup


陆 can (13 oz.) milk


8 oz. sour cream


1 cup shredded sharp cheddar





Thoroughly rinse potatoes and drain. In a large bowl combine all ingredients. Using a crock pot liner in a large oval crock pot, dump potato mixture in. Pat down until level. Place a sheet of aluminum foil over the top of the potatoes, patting in place. Make sure the foil goes up the sides of the pot.





Meatloaf


1 陆 lbs. ground beef (80% or better)


1 medium onion, diced


1/2 tsp garlic


3 beaten eggs


1 8 oz. can tomato sauce


1 cup bread or cracker crumbs


1 TBS parsley flakes


Salt and pepper to taste





In a large bowl, combine ingredients, shape into a loaf and place in the crock pot on top of the foil.





Bake on high 4-5 hours, on low 6-8 hours.


Serves 6-8
Enchiladas





Brown/Drain 1lb Ground Beef. Add back to pan with a dash of Cumino, Chili powder, Garlic Powder, Onion Powder, Salt and Pepper. Add 1/2 cup water and simmer until thick.





Heat a can of Enchilada Sauce on low.





Dip 12 corn tortillas into warm sauce and fill w/ beef. Roll like cigars and stack in a 9x13 inch baking pan. Pour remaining sauce over top. Add a cup of shredded Cheddar Cheese. Bake in preheated 350 degree oven for 15 minutes.





Serve with sour cream, salsa, shredded lettuce, diced onion, and black or Spanish olives.
