Basic deviled eggs:
Cut hard boiled eggs in half, pop out yolks into a bowl and add mayo (in this case, light or fat free would be fine, you just need the consistency) salt, pepper, and mustard to form a paste like texture.
Then: .
Add herbs such as minced fresh tarragon, dill, or chives to the egg yolk.
Give your eggs a sprinkling of curry powder rather than the parsley and paprika topping.
Instead of mayonnaise, use sour cream, yogurt, or creme fraiche.
Use mild softened goat cheese, such as Montrachet, in place of the mayonnaise.
Instead of mustard, add some salsa and top with chopped cilantro.
Use chutney instead of the mustard and add a tablespoon of currants or chopped nuts.
Add minced, sun-dried tomatoes to the basic version.
Add minced black olives, such as kalamata, to the original filling recipe.
Add a sprinkling of crispy crumbled bacon to the filling.

my recipe isn't that unique but my family loves them.
To every tablespoon of mayo you put ( depending how many eggs you are doing ) add a teaspoon of dill relish and a half teaspoon of mustard.Whip with the egg yolks until the texture is really creamy.Use a pastry bag with a star tip to fill the eggs,makes them look a little extra fancy.Sprinkle top with hot paprika.
Try your own recipe. For every 12 eggs add a teaspoon of cinnamon...YUMM
I like to make mine with lowfat sourcream, dry mustard, diced mild green chilis, finely shredded carrots, finely chopped celery, salt and pepper to taste.
Another one would be
lowfat mayo, mustard, green olives, carrots, finely chopped chicken, salt and pepper to taste, and paprika.
