Alfredo sauce is just heavy cream, butter, and Parmesan cheese, freshly grated. I use 50 grams of butter per 200 grams of heavy cream. Heat the butter in a large skillet, add the cream, when the mixture starts to thicken, add freshly grated Parmesan cheese, I would say between 50-100 grams, depending on your taste. Once melted, add a few grinds of fresh black pepper, and whatever you want to serve in it. Some of our favorites are:

crab and prawns
spring peas, finely chopped carrots, onions and prosciutto
