Try out this recipe for Spinach %26amp; Feta Quiche. It only costs about $10.00 for all of the ingredients, and will feed two people for a few days. It's really filling, and really really tasty!

3 cloves garlic, chopped

1 small onion, chopped

1 (10 ounce) package frozen chopped spinach, thawed and drained

1 (4.5 ounce) can mushrooms, drained

1 (6 ounce) package herb and garlic feta, crumbled

Preheat oven to 375 degrees F (190 degrees C).

In a medium skillet, melt butter over medium heat. Saute garlic and onion in butter until lightly browned, about 7 minutes. Stir in spinach, mushrooms, feta and 1/2 cup Cheddar cheese. Season with salt and pepper. Spoon mixture into pie crust.

In a medium bowl, whisk together eggs and milk. Season with salt and pepper. Pour into the pastry shell, allowing egg mixture to thoroughly combine with spinach mixture.

This super hearty soup is made with just four ingredients! And it's very good for you, too. If you'd like, you could add a chopped onion or some minced garlic.

10 oz. can condensed bean and bacon soup

4 cups water

6 carrots, peeled and chopped

2 lb. beef chuck roast, cut into 2'; cubes

1/4 tsp. pepper

Sort through the black eyed peas to remove any stones or shriveled peas, then rinse and drain. Combine all ingredients in 4-5 quart crockpot. Cover and cook on low for 9-10 hours or until peas are tender and beef is done.

I recommend stocking up on spices. It's initially expensive, but most of them will last you quite a while. Experiment with different combinations and you can get lots of different meal flavors without a lot of cost and preparation. Also, it's amazing what you can do with cream of mushroom soup. Makes a good sauce for almost any meat and pasta combination.
