Spinach %26amp; Squash Lasagna Recipe
* 2 16oz. packages spinach lasagna noodles
* 8 cups Tomato Sauce
* 2 tsp olive oil
* 2 cloves garlic - finely chopped
* 1 large zucchini, sliced
* 1 large summer squash, sliced
* 2 cups cottage cheese
* 1 egg white
* 1/2 cup grated parmesan cheese
* 1/2 cup grated mozzarella cheese
* 1 tsp chives
* 1 tsp parsley
* freshly ground black pepper to taste
* Topping - 1/4 cup grated parmesan cheese
Preheat oven to 350 degrees.
In large pan, boil noodles per package directions or until cooked al dente - drain.
In large skillet, heat oil and saut茅 garlic, zucchini and squash until tender.
In bowl, combine cottage cheese, egg, parmesan and mozzarella cheeses, and seasonings.
In large lasagna pan, spread a shallow layer of Tomato Sauce, top with a layer of noodles, a layer of cheese, a layer of vegetables, and top with sauce. Repeat layering until pan is full, ending with tomato sauce on top.
Sprinkle with parmesan cheese and bake for 30-40 minutes, or until bubbling.
Serves 8.

Light Cheese Dip
1 cup low-fat cottage cheese
1/4 cup Neufchatel cheese
1 teaspoon salt-free Dash brand no-salt seasoning blend
2 tablespoons fresh dill or parsley, minced
1 green onion, minced, optional
Combine all ingredients in a food processor. Process until smoothly pureed.
Transfer to a serving bowl. Cover and refrigerate until needed or serve at once.
Curried Eggs Idel
A healthier version of the traditional deviled egg recipe.
4 hard-boiled eggs, halved with yolks removed
1 cup canned garbanzo beans, drained and rinsed
2 cloves garlic
2 teaspoons olive oil
2 teaspoons tahini
2 teaspoons lemon juice
1 teaspoon curry powder
3 to 4 drops Tabasco sauce, to taste
3 to 4 sprigs fresh parsley
1/2 teaspoon salt
Parsley for garnish
Place yolks, beans, garlic, oil, tahini, lemon juice curry powder, Tabasco, salt and parsley in food processor. Blend until smooth
Add this picture to a pastry bag and pipe into egg white halves 鈥?or use a teaspoon to fill the egg whites. Garnish with parsley and more curry powder
Simple Arame Salad
2 cups arame
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup rice wine vinegar
2 tablespoons tamari
2 tablespoons toasted sesame oil
1 cup diced carrot
1/2 cup red pepper, thinly sliced
4 scallions or green onions, minced
1/2 cup shredded daikon radish
2 tablespoons sesame seeds
Place arame in a heavy non-reactive saucepan with hot water to cover. Soak for 15 minutes.
Place next five ingredients in a jar with tight fitting lid. Shake vigorously and set aside.
Drain arame and return to saucepan.
Add carrots and just enough water to cover. Cover and bring to a boil over high heat. Reduce heat to low and simmer 3-4 minutes.
Drain immediately and transfer to a bowl.
Add remaining ingredients and toss.
Shake dressing and pour over salad.
Chill 30 minutes before serving.
Southern Style Vegan Mac %26amp; Cheese
1 medium onion, chopped
1 Tb flour
1/4-1/2 tsp cayenne
1/2 tsp nutmeg
salt and pepper to taste
2 cups unsweetened soy milk
1 block Follow Your Heart vegan cheddar cheese, shredded
2 Tb brewers yeast (nutritional yeast)
1 lb. pasta, cooked
Saute onion in olive oil over medium heat until soft about 10 minutes
Add flour, cayenne, nutmeg, salt and pepper, stir to incorporate
Add soy milk, bring to boil
Add brewers yeast, stir to mix.
Add cheese, reserving 1/4 cup, stir to melt through. and and simmer until thickenedDoes anyone know some delicious recipes I can make out of all natural foods only?
