What are some simple yet delicious Spanish recipes?

Any recipe that isn't too expensive and hard to make is great! Please do not suggest Spanish rice - I already have that recipe. Thanks so much! :DWhat are some simple yet delicious Spanish recipes?
Spanish Chicken Stew - Estofado de Pollo





Prep Time: 15 minutes


Cook Time: 1 hours





Ingredients:


1 whole fryer, cut into pieces or 8-10 pieces of chicken


1/4 cup virgin Spanish olive oil


2 cups of white mushrooms, sliced


4-5 large cloves of garlic, unpeeled


1 1/2 cups dry white wine


1 large yellow onion, coarsely chopped


1 medium sweet red pepper


2 peeled carrots, cut into large pieces


1 - 16 oz. can green peas, drained


salt and pepper to taste





Preparation:


Remove excess fat and skin from chicken, rinse in cold water and pat dry with paper towels. In a large, deep frying pan or skillet, heat olive oil and brown chicken for 5-7 minutes on medium high heat.





Add mushrooms, garlic, onion, carrots and sweet red pepper to pan and saut茅 until mushrooms are softened and onion is translucent, approximately 5 minutes on medium heat.





Add white wine to skillet and turn heat to high until broth boils, then reduce and simmer until chicken is cooked thoroughly and liquid is reduced a bit and thickens, 20-30 minutes. Check the pan while chicken is cooking and add more broth or water if necessary.





Just before serving, add green peas to pan and stir well. Serve with home-fried potatoes

How about Rice Pudding- Spanish style (Arroz Con Leche)? It's delicious, I had to make it with my friend for Spanish Class.





Here's the Recipe:


2 cups of water


1 can evaporated milk.


2 cans of sweetened condensed milk


1 cup of rice


1 teaspoon of vanilla extract


zest of a lemon (optional)


Ground cinnamon


Steps


1. Put the water in a pot with the rice. Bring it to a boil.


2. When the water is boiling, (add optional lemon peel),lower heat and wait for the rice to cook over low heat.


3. When rice is very well cooked add the vanilla extract 2 tablespoons, the evaporated milk, and sweet condensed milk.


4. Stir the mixture constantly until it reaches the desired consistency.


5. Let it cool.


6. Finally, serve it with a dusting of ground cinnamon.





You can also add a little bit of cocoa powder to add a different flavor to it.



Grilled Spanish Chicken Supper


Dinner's truly in the bag with this spicy grilled chicken recipe.

Makes:6 servings





3 medium unpeeled baking potatoes, cut into 1/2-inch cubes (4 cups)


2 medium green or red bell peppers, chopped (2 cups)


1 large onion, coarsely chopped (1 cup)


12 large pimiento-stuffed olives, coarsely chopped


1 can (14 1/2 ounces) diced tomatoes with roasted garlic, undrained


1 tablespoon Gold Medal庐 all-purpose flour


3 teaspoons chili powder


1 teaspoon salt


1 1/2 pounds chicken breast tenders (not breaded)








1. Heat coals or gas grill for direct heat. In large bowl, mix potatoes, bell peppers, onion, olives and tomatoes. Stir in flour, 2 teaspoons of the chili powder and 1/2 teaspoon of the salt. Spoon mixture into large heavy-duty aluminum foil bag.


2. Sprinkle remaining 1 teaspoon chili powder and 1/2 teaspoon salt over chicken. Arrange chicken on top of vegetables. Double-fold open end of bag. Slide foil bag onto cookie sheet to carry to grill.


3. Slide foil bag onto grill. Grill uncovered 4 to 5 inches from medium-high heat about 20 minutes or until potatoes are tender and chicken is no longer pink in center.

How-To


Make your own foil packet with two 18x15-inch sheets heavy-duty aluminum foil. Place vegetable mixture on one sheet of foil; top with chicken. Cover with the other sheet of foil, and tightly seal the edges.






sausage spinach bake


1 package (6 ounces) savory herb-flavored stuffing mix


1/2 pound bulk pork sausage


1/4 cup chopped green onions


1/2 teaspoon minced garlic


1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry


1-1/2 cups (6 ounces) shredded Monterey Jack cheese


1-1/2 cups half-and-half cream


3 eggs


2 tablespoons grated Parmesan cheese


Directions:


Prepare stuffing according to package directions. Meanwhile, crumble sausage into a large skillet; add onions and garlic; cook over medium heat until meat is no longer pink.


In a large bowl, combine the stuffing, sausage mixture and spinach. Transfer to a greased 13-in. x 9-in. baking dish; sprinkle with Monterey Jack cheese. In a small bowl, combine cream and eggs; pour over sausage mixture.


Bake at 400掳 for 30 minutes. Sprinkle with Parmesan cheese; bake 5 minutes longer or until a knife inserted near the center comes out clean
Flan, which is like a custard dessert, is awesome and relatively simple. It only really consists of four ingredients: sugar, condensed milk, evaporated milk and eggs. Its delicious!
What about paella, it's simple to make, and you can pick and choose what to put in it, therefore it contends with your budget.
How about stuffed tomatoes or bell peppers? Or you can always do gazpacho.
