Balsamic-Maple Vinaigrette





1/4 cup good-quality aged balsamic vinegar


1 tablespoon soy sauce


1 tablespoon water


1 tablespoon pure maple syrup


1 tablespoon Splenda


1 clove garlic, minced


Crushed dried red pepper to taste


2 tablespoons cup extra-virgin olive oil





In a medium bowl or food processor, whisk together balsamic vinegar, soy sauce, water, maple syrup, Splenda, garlic, and red pepper. Add olive oil in a thin stream, whisking until emulsified. Note: By gradually whisking or blending the oil into the vinegar, you create an emulsion (a mixture of two liquids that usually don't combine smoothly).

The basic idea is to start with 1/4 cup olive oil to 1/4 teaspoon dry mustard, and then add an acidic ingredient, along with some combination of herbs, ground pepper, garlic, and (if your situation allows it) a little bit of salt.





The dry mustard is used as an emulsifier, to let the olive oil blend with the acid. The acid can be vinegar or citrus juice (usually lemon juice). Start with a 1:4 ratio of vinegar/juice to oil, whisk them together with the dry mustard, and then add vinegar until it has the sharpness you want. Then fold in the seasonings and refrigerate a couple hours or overnight. Tarragon, basil, dill, chives, are commonly used for the herbs, but the mixture depends on how the dressing will be used. I always like garlic minced onion, and red pepper flakes, too.

Why go through all the work! Kraft makes some great salad dressings for under 70 calories for 2 tbs, you just haveta make sure on the nutritional facts. Theres also newer options I havent personally tried like the dressings you can spray instead of pour that cuts TONS of calories.


Either that, or checkout local growers or farmers markets. They usually have unique and yummy dressings.

Salad Dressing with a Kick





INGREDIENTS





鈥?1-1/2 cups fat-free plain yogurt


鈥?3/4 cup chili sauce


鈥?1 tablespoon prepared horseradish


鈥?1 tablespoon steak sauce


鈥?1-1/2 teaspoons Worcestershire sauce


鈥?1/2 teaspoon garlic powder





DIRECTIONS





1. In a small bowl, whisk all of the ingredients. Chill for at least 30 minutes before serving.


Editor's Note: This recipe was tested with Heinz 57 steak sauce.

Nutritional Analysis: 2 tablespoons equals 20 calories, trace fat (0 saturated fat), trace cholesterol, 187 mg sodium, 5 g carbohydrate, trace fiber, 1 g protein.
There are many different ways for doing this, i would try a little bit of avocado oil and some of your favorite vinegar, then add some fresh herbs and garlic for an additional flare
