EASY FILLED CUPCAKES
1 box yellow or chocolate cake mix
2 eggs
2 c. dairy sour cream
1/3 c. apricot or strawberry preserves
Preheat oven to 350 degrees and line 24 muffin cups with paper liners. In large bowl, combine cake mix, sour cream, and eggs. With large spoon (not mixer), stir until well blended. Set aside 1 1/2 cups batter. Spoon batter into muffin cups, filling halfway. Use back of spoon to make small indention in the batter. Fill with 1/2 teaspoon preserves. Use remaining batter to cover evenly - cups should be 3/4 full. Bake 20-25 minutes or until tops spring back when touched. Cool 1-2 minutes before removing from pan.

EASY VEGGIE SOUP
2 large cans chicken broth
1 head shredded cabbage
2 stalks celery, sliced
3 carrots, sliced
1 onion, sliced
1 tomato, diced
1/3 can tomato paste
garlic powder, oregano, basil, pepper to taste
Combine all ingredients in a large pot. Bring to a boil, then simmer for about 3-4 hours.

Grilled Ham Gruyere Sandwiches
This simple sandwich can be made with any type of cheese. Gruyere is a rich and smooth type of Swiss cheese that is delicious with ham.
Prep Time: 15 minutes
Cook Time: 5 minutes
Ingredients:
2 Tbsp. mayonnaise
2 Tbsp. grated Parmesan cheese
8 slices cracked wheat or sourdough bread
4 (1/4'; thick) slices deli smoked ham
4 slices Gruyere or Swiss cheese
1/2 cup roasted red pepper strips, drained
1/2 cup fresh basil leaves or fresh baby spinach leaves
2 Tbsp. butter
Preparation:
In small bowl combine mayonnaise and Parmesan cheese and mix well. Spread on one side of each piece of bread. Make sandwiches with the coated bread, Gruyere cheese, ham, the red pepper strips, and basil or baby spinach. Spread outside of sandwiches with the softened butter.
Grill sandwiches on dual contact indoor grill or panini grill or griddle until toasted and crisp. Serves 4
Grilled Creamy Roast Beef Sandwiches
These wonderful crisp and hot sandwiches have a creamy filling studded with roast beef and red bell peppers.

Cook Time: 5 minutes
Ingredients:
Filling from Roast Beef Filo Cups
Whole wheat bread
Softened butter
Preparation:
Using about 1/4 cup of the filling from Roast Beef Filo Cups, make sandwiches with the bread. Spread the outsides of the sandwiches with some of the softened butter.
Grill sandwiches on a dual contact indoor grill, a panini maker, or just in a skillet, pressing down gently as the sandwich cooks. When bread is crisp and golden brown, cut sandwiches in half and serve immediately.
Grilled Teriyaki Chicken Sandwich
These simple sandwiches are fun to make and eat. I love the combination of teriyaki seasonings with chicken and pineapple.
Prep Time: 30 minutes
Cook Time: 6 minutes
Ingredients:
1/3 cup mayonnaise
1 Tbsp. teriyaki baste and glaze sauce
1 Tbsp. toasted sesame seeds
1 tsp. grated ginger root
1 Tbsp. honey
4 boneless, skinless chicken breasts
2 Tbsp. teriyaki baste and glaze sauce
8 oz. can pineapple slices, drained
8 slices sourdough bread
4 slices Swiss cheese
3 Tbsp. mayonnaise
Preparation:
In small bowl, combine mayonnaise, 1 Tbsp. teriyaki sauce, sesame seeds, ginger root and honey and blend well. Cover and refrigerate.
Brush 2 Tbsp. teriyaki sauce on chicken breasts and set aside. Pat pineapple slices dry with paper towel and grill on George Foreman two sided grill until tender and hot, about 1-2 minutes. Remove from grill. Grill chicken breasts on George Foreman two sided grill for 4-6 minutes until thoroughly cooked.
Slice chicken. Then spread reserved mayonnaise mixture on one side of each piece of bread. Make a sandwich with grilled chicken slices, cheese, and grilled pineapple.
Spread a thin layer of mayonnaise on the outsides of the sandwiches. Grill in the two-sided grill until bread is toasted and cheese is melted. Cut sandwiches in half and serve immediately. 4 - 6 servings

Ingredients:
6 boneless, skinless chicken breasts
2 cups salsa
1/3 cup brown sugar
2 Tbsp. honey dijon mustard
Preparation:
Preheat oven to 350 degrees F. Combine all ingredients and place in 13x9'; pan. Bake at 350 degrees F. for 40-45 minutes until chicken is thoroughly cooked. 6 servings
u can take minute rice and make it in the mic with the one person rice mix and add to a bowl then mic a simply steam of asian style veggies from green giant or simply steam or birds eye and put over the rice and add soy sauce and chopped cashews or almonds and mix for a stir fry toss some cooked shrimp if u like as well
or
take a potato and bake in the mic for 5-8 minutes super quick add sour cream and or melt velveeta cheese diced in cubes and add milk and melt in mic quickly and pour over the potato
or
take 2 carmel rice cakes from quaker and use fat free cool whip or regular and place some between the two and put together and let sit in fridge for an hour and enjoy
or
take jelly and cream cheese and put on a bagel
or
peanut butter and jelly on saltines for pb and j cracker sandwiches
or
take perdue chicken nuggets or chicken strips breaded and heat in a jar of tomato sauce of choice
cut a roll and sprinkle with mozzerella cheese and then when meat and sauce hot add to the sandwich and enjoy a chicken parm
